Who's Uncle Bernie?
Hello Pickled egg fans!
You don't have to call me Uncle Bernie, but I gotta admit I do like it.
Firstly, rumour has it that I've had a moustache since I was eleven years old. In truth I was able to grow these full and bushy whiskers at the age of seven. In my middle teens due to the facial hair, I was able to partake in adult beverages in bars close to home. The first time I ever saw them, they were sitting on the counter at The Southwood Hotel, a giant jar of pickled eggs. On a dare, I bellied up to the bar and ordered one. Held it there between my thumb and pinky, I sniffed it. Then thought, “Why not. What could go wrong?” From that eggzact first bite, I was hooked.
Fast forward a few years later it was clear, pickled eggs became my favorite snack and I could find them in most old school pubs. Afterall, one can't live on beer alone.
As time went by, it became eggseptionally tougher to find a bar serving pickled eggs. So, one day, (I think it was a Tuesday), I decided to take the task into my own hands, and started making pickled eggs in my own kitchen. Dang, they were eggstreamly tasty.
As a busy millwright at Chrysler Canada, one must stay fortified. What better snack then a protein filled pickled egg? My coworkers eggreed and soon were asking me to brew them up a jar. Before I knew it, I was processing an eggstra 30 to 40 jars a month.
In 2022, after 31 years of service I retired. After a month with my feet up relaxin’ and getting mighty bored, I asked myself, “Hey Uncle Bernie, (it’s what I like to say when I talk to myself), what are you gonna do to keep yourself busy?” I figured I may as well put my 25 years Eggsperience to good use. I also concluded that the dinosaurs didn't have pickled eggs and look what happened to them, they became eggstinct.
I started back making pickled eggs again. I Couldn’t make them fast enough. My eggs became so eggceedingly popular with friends, family, strangers, and my former coworkers still wanted me to supply them by delivering jar to the turnstile gates. My hobby grew eggsponentially into a business. Soon they were available by the egg at the finest watering holes and by the jar at specialty markets in Windsor-Essex. And in 2024, a store front at The City Market in Walkerville where I process and sell them.

In the 1830s, there was even a place in London known as Pickled Egg Lane. Here, pubs and taverns served pickled eggs by the single egg or by the jar. Pickled Eggs have kept people full for centuries. People have been enjoying pickled eggs for over two hundred years! Not only are pickled eggs a great source of protein, but they last a long time. During 1840 -1870, pickled eggs were often included in wagon carts to be brought out west. Many pickled egg recipes are Dutch, German, English, Amish, Polish and Italian in origin.

Pickled Sausage: One pound of Cottom Cold Storage Kielbasa in a 1L jar with Uncle Bernie's Special Sausage brine, a nice garlic hit with bit of malt Vinegar and Smokey overtone.

Sometimes I have time to pickle some veggies but not often. If I do I'll let you know right here. My mind is always spinning on new recipes.

Eggsamples Of Uses For Eggstra Brine
Some customers have asked me what to do with the brine after they finish a jar of my pickled eggs. I strain the leftover brine of Uncle Bernie's Gourmet Pickled Eggs, bottle it for use in:
- deglazing my frying pan when cooking meat (not recommended for cast iron fry pan)
- splash it in a stir fry.
- I mix it with some infused olive oil for a nice salad dressing.
- It makes a great marinade for any kind of meat.
- I add it to BBQ sauce or any kind of sauce really like spaghetti or chili.
- Some brines go well in a vodka-based cocktail.
- Or you can do like some customers do and just stick a straw in the jar and drink it.
- Please do not try to preserve anything in the used brine. The acidity is lower than a safe pickling level.

And what a year it’s been. It is with a big smile on my face and a happy heart that I announce this news. I’d like to thank all the pickled egg & sausage fans that I’ve had the pleasure of meeting. The Food Spotter sites on Facebook that helped me achieve this wide-ranging popularity. In this past year UB’s has been nominated for best new business of the year and honoured with a full article in BizX Magazine, thanks Debra. In the beginning the wonderful people of 10 Friends Diner let me use their kitchen. Fred’s Farm Fresh took a chance on me and was the first market to carry my products. Thanks Fred & Tina. Now my jars are being sold in several markets from Amherstburg to Chatham to Kingsville and more locations to come. Also, as I started out, one of my goals was to put pickled eggs & sausage back in local bars. The Kildare House was the first to welcome my jars that they sell for $2 an egg, Thanks Vito and Taylor. Now many bars in Essex County boast these snacks are available at their bar. I’d also like to thank Lisa Moilala for the design and maintenance of my website.
